Honey Garlic Pork chops
Ingredients:
- 1/4 cup honey
- 2 tbsp soy sauce
- 4 cloves garlic, minced
- 4 pork loin chops, boneless
Directions:
- Mix together ingredients for sauce; honey, soy sauce, and garlic.
- Let pork chops marinate in sauce. (I used thicker chops and only let them marinate for about 45 minutes. Next time I will let them sit longer because of their thickness. I didn't feel like they had quite enough flavor.)
- Cook the pork chops to temperature on a grill. (I used the George Foreman, cooked for about 8 minutes, and got great results!)
Roasted Mashed Potatoes
Ingredients:
- 12 to 15 Baby Red Potatoes
- Garlic Salt
- Extra Virgin Olive Oil
Directions:
- Bring a pot of water to boil.
- Add the potatoes and let them boil for around 30 minutes or until they are soft enough to pierce all the way through with a fork.
- Preheat oven to 450.
- Remove each potato and let them rest for about 5 minutes on a towel.
- Use another towel to gently press the potatoes to about 1/4 inch thickness.
- Drizzle olive oil over a shallow baking dish.
- Transfer the potato rounds to the dish.
- Drizzle with olive oil and garlic salt.
- Flip the potatoes and drizzle with oil and salt.
- Bake the potatoes for about 30 min or until nice and crispy.
